A woman who lost 130 pounds following a low-carb diet has revealed the recipe for the 90-second cinnamon roll she eats whenever she is craving dessert.
Mayra Wendolyne, 39, from Laguna Beach, California, weighed 315 when she started her weight loss journey in 2011. She dropped 100 pounds in five months through diet and exercise.
Three years later, she switched to a low-carb, high-fat keto diet, which she continues to follow, and her weight now hovers around 185 pounds.
The self-taught cook and baker has more than four million followers across YouTube, Instagram, and TikTok, where she shares her favorite recipes, including her go-to desserts.

The weight-loss influencer began by mixing melted butter, an egg, and vanilla extract in a microwavable ramekin. She then added almond flour, baking powder, cinnamon, and stevia
After combining the wet and dry ingredients, she topped the dessert with a cinnamon-sugar mixture
Wendolyne, who is known as ‘Low Carb Love’ online, went viral on TikTok after demonstrating how to make a low-carb cinnamon roll in less than two minutes.
‘I’ve lost over 100 pounds by making desserts like this,’ she explained.
To make the cake, she whisked together melted butter, an egg, and vanilla extract in a microwavable ramekin.
Wendolyne added almond flour ‘to keep it low-carb and gluten-free,’ baking powder ‘so we have that rise,’ and cinnamon ‘because, duh, it’s a cinnamon roll.’
She also mixed a small packet of stevia into the batter, but she noted that you can use your powdered sweetener of choice.
After giving it a good stir, she topped the cake with a mixture of cinnamon and powdered sweetener that she formed into a ‘little swirl.’
‘Now this is not going into the oven,’ she explained. ‘It’s going into the microwave for 90 seconds.’
While the cinnamon roll was cooking, she made a ‘super quick little cream cheese frosting’ by mixing softened cream cheese with powdered sweetener, and almond milk.

90-SECOND CINNAMON ROLL
Ingredients:
Cake
- 1 tbsp butter, melted
- 3 tbsp almond flour
- 1/2 tsp baking powder
- 1 tbsp powdered sweetener
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Cinnamon topping
- 1/2 tbsp cinnamon powder
- 2 tbsp powdered sweetener
Cream cheese frosting
- 2 oz cream cheese softened
- 1 tbsp powdered sweetener
- 1 tbsp unsweetened almond milk
Directions:
- Melt butter in the microwave and whisk in the egg and vanilla extract
- Add all of the dry ingredients and mix until incorporated
- Sprinkle with cinnamon topping
- Microwave for 90 seconds
- Top with cream cheese frosting

Wendolyne then pulled the cake out of the microwave and poured the frosting into a plastic baggie, cutting the tip to create a makeshift piping bag.
‘Now we frost,’ she said, making a swirl design with the frosting to give the cake a classic cinnamon roll look.
She concluded her video by grabbing a fork and taking a bite of the dessert.
‘Mmm, mmm, mmm,’ she said.
Wendolyne’s video has been viewed nearly 932,000 times and has received more than 181 comments since it was posted on November 9.
